Ingredients

  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked chickpeas or lentils
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh lemon juice
  • Fresh herbs (cilantro or parsley) for garnish

Instructions

  1. Prep the veggies: Wash and chop the bell peppers, zucchini, and cherry tomatoes into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and chopped onions; sauté until fragrant, about 2-3 minutes.
  4. Toss in chopped bell peppers and zucchini; stir-fry for about 5 minutes.
  5. Incorporate chickpeas or lentils, cumin, and paprika; mix well.
  6. Season to taste with salt, pepper, and lemon juice.
