Description

White Bean-Stuffed Mini Bell Peppers are a delicious and healthy appetizer or snack, perfect for any occasion.


Ingredients

  • 12 mini bell peppers
  • 1 can (15 oz) white beans, drained and rinsed
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the mini bell peppers in half lengthwise and remove the seeds.
  3. In a bowl, mash the white beans with a fork until mostly smooth.
  4. Add the diced onion, minced garlic, cumin, paprika, salt, and pepper to the mashed beans and mix well.
  5. Stuff each bell pepper half with the white bean mixture.
  6. Place the stuffed peppers on a baking sheet and drizzle with olive oil.
  7. Bake in the preheated oven for 20-25 minutes, until the peppers are tender.
  8. Garnish with fresh parsley before serving.
