- 12 mini bell peppers
- 1 can (15 oz) white beans, drained and rinsed
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the mini bell peppers in half lengthwise and remove the seeds.
- In a bowl, mash the white beans with a fork until mostly smooth.
- Add the diced onion, minced garlic, cumin, paprika, salt, and pepper to the mashed beans and mix well.
- Stuff each bell pepper half with the white bean mixture.
- Place the stuffed peppers on a baking sheet and drizzle with olive oil.
- Bake in the preheated oven for 20-25 minutes, until the peppers are tender.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add other spices or herbs to the filling for extra flavor.
