Ingredients

  • 4 cups powdered sugar
  • ½ cup white chocolate, melted and cooled
  • 23 tbsp milk
  • 1 tsp vanilla extract (for frosting)
  • Fresh raspberries (for garnish)
  • White chocolate curls or shavings (for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Preheat the oven to 350°F and grease three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat softened butter with granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each. Stir in vanilla extract and melted white chocolate.
  5. Gradually add the flour mixture and milk, alternating until just combined.
  6. Divide the batter among prepared pans and bake for 25–30 minutes.
  7. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the raspberry filling, cook raspberries, sugar, and lemon juice in a saucepan until the berries break down. Stir in cornstarch slurry until thickened and let cool.
  9. For the frosting, beat softened butter, gradually add powdered sugar, and mix in melted white chocolate and vanilla. Adjust consistency with milk.
  10. Assemble the cake by leveling layers, frosting between layers, and covering the entire cake. Chill to set frosting.
  11. Garnish with fresh raspberries, chocolate curls, and mint before serving.

Make the cake layers in advance and store them properly for best results. Ensure cakes are completely cool before frosting to avoid melting.
