Description

A vibrant and savory dish featuring marinated chicken in aji amarillo sauce, served over rice or quinoa with avocado.

Ingredients

  • Chicken (bone-in or boneless)
  • Aji amarillo sauce
  • Garlic
  • Onion
  • Cilantro
  • Lime
  • Rice or quinoa
  • Avocado
  • Salad greens

Instructions

  1. Sauté aromatics: In a large skillet over medium heat, melt a splash of oil and add minced garlic and chopped onion. Sauté until they become translucent.
  2. Brown the chicken: Add your choice of chicken pieces to the skillet, seasoning them with salt and pepper. Cook until golden brown.
  3. Introduce the sauce: Pour in the aji amarillo sauce, chopped cilantro, and fresh lime juice. Stir to coat everything generously.
  4. Simmer to perfection: Reduce the heat to low and allow the mixture to simmer until the chicken is tender and fully cooked.
  5. Serve it up: Spoon your Yellow Churu Chicken over a bed of rice or quinoa, top with sliced avocado, sprinkle with cilantro, and serve with a crisp salad.

Notes

Prepare the chicken and sauce in advance for enhanced flavor. Serve fresh or as leftovers in tacos or burritos.
