- 1/4 cup chopped green onions
- Oil for frying
Instructions
- Grate the yellow zucchinis and place them in a bowl. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove excess moisture.
- In a mixing bowl, combine the drained zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and green onions. Mix until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon.
- Fry for about 3-4 minutes on each side or until golden brown.
- Remove from the skillet and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
