Description

A surprising dessert that transforms ripe tomatoes into a delightful tart with rich, creamy filling and a flaky crust.


Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 pinch salt
  • ½ cup unsalted butter, cold and cubed
  • 34 tablespoons ice water
  • 2 cups ripe tomatoes, blended
  • 8 oz cream cheese
  • 2 tablespoons lemon juice
  • ¼ cup sugar (adjustable)
  • Fresh basil or honey for topping

Instructions

  1. Prepare the crust: In a bowl, mix flour, sugar, and salt. Cut in butter until resembling coarse crumbs. Gradually add ice water until it comes together.
  2. Chill the dough: Press into a disc, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Blind bake the crust: Roll out the dough in a tart pan, prick with a fork, cover with parchment and weights, bake for 15 minutes, then remove weights and bake for another 10 minutes.
  5. Prepare the tomato filling: Blend tomatoes, cream cheese, lemon juice, and sugar in a food processor until smooth, adjusting the sweetness to your taste.
  6. Assemble and bake: Pour filling into the crust, smooth the top, and bake for 25–30 minutes until set.
  7. Cool and serve: Let cool before slicing, topping with fresh basil or a drizzle of honey just before serving.

Notes

Tomato desserts can be prepared in advance and stored in the fridge. Customize with different tomato varieties or herbs for added flavor.
