- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 1 pinch salt
- ½ cup unsalted butter, cold and cubed
- 3–4 tablespoons ice water
- 2 cups ripe tomatoes, blended
- 8 oz cream cheese
- 2 tablespoons lemon juice
- ¼ cup sugar (adjustable)
- Fresh basil or honey for topping
Instructions
- Prepare the crust: In a bowl, mix flour, sugar, and salt. Cut in butter until resembling coarse crumbs. Gradually add ice water until it comes together.
- Chill the dough: Press into a disc, wrap in plastic, and refrigerate for 30 minutes.
- Preheat your oven to 375°F (190°C).
- Blind bake the crust: Roll out the dough in a tart pan, prick with a fork, cover with parchment and weights, bake for 15 minutes, then remove weights and bake for another 10 minutes.
- Prepare the tomato filling: Blend tomatoes, cream cheese, lemon juice, and sugar in a food processor until smooth, adjusting the sweetness to your taste.
- Assemble and bake: Pour filling into the crust, smooth the top, and bake for 25–30 minutes until set.
- Cool and serve: Let cool before slicing, topping with fresh basil or a drizzle of honey just before serving.
Notes
Tomato desserts can be prepared in advance and stored in the fridge. Customize with different tomato varieties or herbs for added flavor.
