Description

Indulge in these soft yet slightly chewy Almond Flour Chocolate Cookies, featuring rich dark chocolate and a delightful nutty flavor.


Ingredients

Scale
  • 50 g butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 200 g ground almonds/almond flour
  • 50 g cocoa powder, unsweetened
  • 50 g xylitol
  • 1/4 tsp fine sea salt
  • 70 g dark chocolate chips (70% or higher)

Instructions

  1. Preheat the oven to 200°C / 180°C fan / 390°F and prepare two baking trays with greaseproof paper.
  2. Mix the dry ingredients in a large bowl: whisk together the ground almonds, cocoa powder, salt, and xylitol.
  3. Combine the wet ingredients in a separate bowl: whisk the eggs, melted butter, and vanilla extract until smooth.
  4. Create the dough by pouring the wet mixture into the dry, stirring until a soft dough forms.
  5. Fold in the dark chocolate chips evenly into the dough.
  6. Shape the cookies, using about a tablespoon of dough per cookie, rolling into balls and placing them on the baking sheet.
  7. Flatten gently using a flat-bottomed glass, and bake for approximately 15 minutes.
  8. Cool the cookies on the baking sheet for 10-15 minutes, then transfer to a cooling rack.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. Reheat in the oven at 150°C/300°F for about 5 minutes.
