- 50 g butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 200 g ground almonds/almond flour
- 50 g cocoa powder, unsweetened
- 50 g xylitol
- 1/4 tsp fine sea salt
- 70 g dark chocolate chips (70% or higher)
Instructions
- Preheat the oven to 200°C / 180°C fan / 390°F and prepare two baking trays with greaseproof paper.
- Mix the dry ingredients in a large bowl: whisk together the ground almonds, cocoa powder, salt, and xylitol.
- Combine the wet ingredients in a separate bowl: whisk the eggs, melted butter, and vanilla extract until smooth.
- Create the dough by pouring the wet mixture into the dry, stirring until a soft dough forms.
- Fold in the dark chocolate chips evenly into the dough.
- Shape the cookies, using about a tablespoon of dough per cookie, rolling into balls and placing them on the baking sheet.
- Flatten gently using a flat-bottomed glass, and bake for approximately 15 minutes.
- Cool the cookies on the baking sheet for 10-15 minutes, then transfer to a cooling rack.
Notes
Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. Reheat in the oven at 150°C/300°F for about 5 minutes.
