- 2 cups chicken breast (or thighs), diced
- 1 cup long-grain rice
- 2 cups assorted vegetables (carrots, peas, bell peppers)
- 1 can cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
Instructions
- Preheat your oven to 375°F (190°C).
- Melt 2 tablespoons of butter in a skillet over medium heat, then add diced chicken seasoned with salt and pepper. Cook for about 8-10 minutes, or until golden brown and fully cooked.
- Toss in your choice of chopped vegetables and a tablespoon of garlic powder. Sauté for an additional 5 minutes.
- Mix 1 cup of uncooked rice, sautéed chicken and vegetables, 1 can of cream of chicken soup, and 1 cup of chicken broth in a large bowl until well combined.
- Transfer the mixture to a greased 9×13 inch casserole dish.
- Sprinkle with shredded cheddar cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the rice is tender and the chicken is bubbly.
- Cool for a few minutes before serving.
Notes
Make-ahead options: Assemble the casserole the night before and store it in the fridge. Adjust baking time if it’s cold from the fridge.
