- 4 chicken breasts
- 1 cup Brie cheese, cut into small pieces
- 1 cup apples, diced
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the filling by mixing Brie cheese, diced apples, chopped thyme, salt, and pepper in a bowl.
- Slice a pocket into each chicken breast, ensuring not to cut all the way through.
- Stuff each chicken breast pocket with the apple and Brie mixture.
- Sear the stuffed chicken in olive oil over medium-high heat for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish, pour chicken broth on top, cover with foil, and bake for 25-30 minutes until cooked through.
- Let the chicken rest for 5 minutes before serving.
Notes
Make-ahead: Prepare the stuffing in advance and refrigerate for up to 4 hours. You can also use an air fryer at 380°F for about 20 minutes.
