Description

A cozy dish featuring tender chicken breasts stuffed with creamy Brie and sweet apples, enhanced by fresh thyme.


Ingredients

  • 4 chicken breasts
  • 1 cup Brie cheese, cut into small pieces
  • 1 cup apples, diced
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the filling by mixing Brie cheese, diced apples, chopped thyme, salt, and pepper in a bowl.
  3. Slice a pocket into each chicken breast, ensuring not to cut all the way through.
  4. Stuff each chicken breast pocket with the apple and Brie mixture.
  5. Sear the stuffed chicken in olive oil over medium-high heat for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish, pour chicken broth on top, cover with foil, and bake for 25-30 minutes until cooked through.
  7. Let the chicken rest for 5 minutes before serving.

Notes

Make-ahead: Prepare the stuffing in advance and refrigerate for up to 4 hours. You can also use an air fryer at 380°F for about 20 minutes.
