- 200g feta cheese
- 4 large eggs
- 1 cup cherry tomatoes
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the feta cheese in the center of a baking dish and surround it with cherry tomatoes. Drizzle with olive oil and season with salt and pepper.
- Bake for about 20 minutes until the tomatoes are bursting and the feta is golden.
- Remove from the oven and create four small wells in the mixture. Crack an egg into each well.
- Return to the oven and bake for an additional 10-12 minutes, or until the eggs are cooked to your liking.
- Add the spinach to the dish in the last 2 minutes to wilt.
- Garnish with fresh herbs if desired and serve warm.
