Description

Ingredients

  • 200g feta cheese
  • 2 cups cherry tomatoes
  • 1 bell pepper, chopped
  • 1 onion, sliced
  • 4 large eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (basil, parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the vegetables: In your baking dish, combine cherry tomatoes, chopped bell pepper, and sliced onion. Drizzle with olive oil, sprinkle with salt and pepper, and toss well.
  3. Add the feta by nesting it in the center of your vegetable medley.
  4. Bake for about 20 minutes until the veggies are soft and the feta is golden brown.
  5. Crack the eggs around the feta, keeping yolks intact.
  6. Return to the oven and bake for an additional 10-12 minutes until eggs reach desired doneness.
