Ingredients

  • 1 lb steak tips (sirloin or flank)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cups assorted vegetables (bell peppers, zucchini, carrots)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine steak tips with balsamic vinegar, olive oil, garlic powder, Italian seasoning, salt, and pepper in a large mixing bowl.
  3. Spread the steak tips evenly on one side of a sheet pan.
  4. Toss assorted vegetables with olive oil, salt, and pepper, then arrange them in a single layer on the other side of the pan.
  5. Roast everything in the oven for 20-25 minutes, checking the steak’s doneness with a meat thermometer.
  6. Remove from the oven, let rest for a few minutes, then serve warm.

Notes

For extra flavor, marinate the steak tips the night before. Avoid crowding the pan during roasting to ensure even cooking.
