- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 small onion, diced
- 1 bell pepper, diced
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat.
- Add diced onion and bell pepper, sauté until softened.
- Add ground beef, cook until browned, and drain excess fat.
- Stir in taco seasoning, salt, and pepper.
- Place a tortilla in the skillet, sprinkle half with cheese, add beef mixture, and fold the tortilla over.
- Cook until golden brown on both sides and cheese is melted.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve hot.
