- 4 medium Beets, roasted
- 8 oz Goat Cheese, softened
- 1 sheet Puff Pastry, thawed
- 2 tbsp Olive Oil
- Fresh Herbs (thyme, basil, chives), for garnish
- Salt, to taste
- Pepper, to taste
- 1/4 cup Balsamic Reduction
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast for 45-50 minutes until tender.
- Roll out the puff pastry on a floured surface and cut into rounds.
- Bake the puff pastry according to package instructions until golden, about 12-15 minutes.
- Slice the roasted beets into thin rounds.
- Assemble layers in a tower with puff pastry, a slice of beet, and goat cheese, repeating until you have three layers.
- Drizzle with olive oil and balsamic reduction, then sprinkle with herbs, salt, and pepper.
