- 1 baguette, sliced
- 4 oz goat cheese
- 1 cup fresh blueberries
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp fresh thyme
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the baguette into ½-inch thick rounds.
- Brush each slice lightly with olive oil using a pastry brush.
- Place the slices on a baking sheet and toast them in the oven for 8-10 minutes.
- Combine balsamic vinegar and honey over medium heat in a small pan. Stir until fully combined.
- Gently add the fresh blueberries and cook for about 5-7 minutes, stirring occasionally.
- Remove the pan from heat and fold in fresh thyme.
- Spread a layer of goat cheese on each toasted crostini.
- Top each crostini with the blueberry mixture and serve immediately.
