Place the sliced cucumbers and onions in a large bowl. Sprinkle with the kosher salt and gently toss to coat evenly.
Cover the bowl and refrigerate for 1 to 2 hours. This step is essential for achieving that classic crisp bread and butter pickle texture — the salt draws out excess moisture from the cucumbers and onions, firming up their texture and preventing the finished pickles from becoming watery or limp.
Drain the cucumbers and onions thoroughly, then rinse under cold water to remove excess salt. Drain again well before proceeding.
In a saucepan, combine the white vinegar, apple cider vinegar, sugar, water, celery seeds, mustard seeds, black peppercorns, turmeric, and red pepper flakes (if using).
