Description

A decadent brunch featuring crispy sourdough toast topped with creamy stracciatella cheese, sweet roasted Campari tomatoes, and savory prosciutto, enhanced with fresh basil.


Ingredients

  • 4 slices of crispy sourdough bread
  • 1 cup creamy stracciatella cheese
  • 2 cups Campari tomatoes, halved
  • 4 slices prosciutto
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the Campari tomatoes in half and arrange them on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast the tomatoes for 20-25 minutes until soft and caramelized.
  4. Toast sourdough slices until golden and crispy.
  5. Spread stracciatella cheese over the warm toast.
  6. Top with roasted tomatoes and prosciutto.
  7. Garnish with fresh basil and serve immediately.

Notes

Make-ahead: Roasted tomatoes can be prepared a day in advance. Reheat before serving.
