Description

A rich and aromatic Indian dish made with tender chicken in a creamy tomato sauce.


Ingredients

  • 1 lb Boneless, skinless chicken thighs
  • 1 cup Yogurt
  • 2 tsp Garam masala
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1/2 tsp Turmeric
  • 1 tsp Salt
  • 2 tbsp Butter
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1 can (15 oz) Tomatoes, pureed
  • 1 tbsp Sugar
  • 1/2 cup Heavy cream

Instructions

  1. Marinate the Chicken: In a bowl, mix yogurt, garam masala, cumin, coriander, turmeric, and salt. Add chicken pieces, ensuring each piece is well-coated. Cover and refrigerate for at least one hour or, ideally, overnight.
  2. Cook the Chicken: In a skillet, melt butter over medium heat. Add marinated chicken, searing until nicely browned on both sides—about 5–7 minutes. Don’t worry if it isn’t fully cooked; it will finish cooking later.
  3. Prepare the Sauce: In the same pan, add chopped onions and sauté until golden, about 5 minutes. Stir in minced garlic and ginger, letting the fragrant aroma fill your kitchen.
  4. Add Tomatoes and Spices: Pour in pureed tomatoes, additional spices, and sugar. Let this simmer for 10-15 minutes, letting those rich flavors meld together.
  5. Blend It Smooth: To achieve a silky sauce, use a blender to puree the mixture until smooth, then return it to the pan.
  6. Finish the Dish: Stir in cream, adjusting seasoning to your liking. Fold in the cooked chicken and simmer gently for another 10 minutes.

Notes

For a spicier kick, include a diced chili pepper in the marinade.
