For the Soup

- 3 medium carrots, peeled and sliced – Add natural sweetness and vibrant color to the soup.
- 2 medium potatoes, peeled and diced – Contribute heartiness, helping make this soup a filling, complete meal.
- 1 zucchini, diced – Adds a tender vegetable component that cooks relatively quickly, best added toward the end.

Instructions
In a bowl, mix the ground meat, rice, egg, cilantro, onion, and seasonings until well combined. Be careful not to overmix, as this can result in denser, tougher meatballs.
Form small meatballs, about 1 inch in diameter, and set them aside on a plate or tray while you prepare the broth.
Heat the olive oil in a large pot over medium heat. Sauté the diced onion and minced garlic until fragrant, about 2–3 minutes.
Add the diced Roma tomatoes to the pot and cook until softened, allowing them to break down slightly and release their juices into the aromatics.
Pour in the beef or chicken broth, bring to a boil, and season with cumin, chili powder (if using), salt, and pepper.
Add the carrots, potatoes, and corn to the pot. Simmer for 10 minutes, allowing these heartier vegetables to begin softening.
Carefully drop the meatballs into the simmering broth, one at a time, to prevent them from sticking together or breaking apart.
After the meatballs have simmered for about 10 minutes, add the diced zucchini and cook for another 10–15 minutes, or until the meatballs are fully cooked through and the vegetables are tender.
