- 2 lbs ground beef (80/20)
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1/2 cup milk
- 1 onion, diced
- 3 large onions, sliced for topping
- Worcestershire sauce
- Thyme, salt & pepper
- 2 tbsp brown sugar
Instructions
- Preheat your oven to 350°F.
- Mix the ground beef, breadcrumbs, beaten eggs, milk, diced onion, Worcestershire sauce, thyme, salt, and pepper in a large mixing bowl.
- Shape the mixture into a loaf shape and place it in a loaf pan.
- Caramelize the sliced onions in a sauté pan with brown sugar over medium-low heat for about 20 minutes.
- Top the shaped meatloaf with the caramelized onions.
- Bake for approximately 1 hour and 15 minutes, until the internal temperature reaches 160°F.
- Rest for 10-15 minutes before serving.
Notes
Let the ground beef sit at room temperature for easier mixing. Consider grating onions for a smoother texture.
