Description

A comforting meatloaf featuring seasoned beef and sweet caramelized onions, perfect for family dinners.


Ingredients

  • 2 lbs ground beef (80/20)
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1 onion, diced
  • 3 large onions, sliced for topping
  • Worcestershire sauce
  • Thyme, salt & pepper
  • 2 tbsp brown sugar

Instructions

  1. Preheat your oven to 350°F.
  2. Mix the ground beef, breadcrumbs, beaten eggs, milk, diced onion, Worcestershire sauce, thyme, salt, and pepper in a large mixing bowl.
  3. Shape the mixture into a loaf shape and place it in a loaf pan.
  4. Caramelize the sliced onions in a sauté pan with brown sugar over medium-low heat for about 20 minutes.
  5. Top the shaped meatloaf with the caramelized onions.
  6. Bake for approximately 1 hour and 15 minutes, until the internal temperature reaches 160°F.
  7. Rest for 10-15 minutes before serving.

Notes

Let the ground beef sit at room temperature for easier mixing. Consider grating onions for a smoother texture.
