- 2 pounds ground chicken
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 egg
- 1/2 cup breadcrumbs
- 8 ounces mozzarella cheese, cut into cubes
- 2 tablespoons cream cheese
- 1/3 cup honey
- 2 tablespoons barbecue sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 tablespoon butter
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the ground chicken, salt, black pepper, garlic powder, onion powder, paprika, egg, and breadcrumbs in a large bowl.
- Divide the chicken mixture into equal portions and flatten each into a thick round.
- Place a cube of mozzarella and a scoop of cream cheese in the center of each round, then seal the edges.
- Simmer honey, barbecue sauce, Dijon mustard, garlic powder, and butter in a saucepan over medium heat for 2-3 minutes.
- Arrange the stuffed medallions in a greased baking dish and brush generously with glaze.
- Bake for 25-30 minutes, brushing halfway through cooking.
- Broil for an additional 2-3 minutes for caramelization, then let rest for 5 minutes.
- Garnish with fresh parsley and thyme before serving.
Notes
Make-ahead: Assemble a day in advance and store in the fridge. Cook in an air fryer at 370°F for 15-20 minutes for a crispy exterior.
