Description

Delicious chicken medallions stuffed with creamy cheese and coated in a sweet honey barbecue glaze.


Ingredients

  • 2 pounds ground chicken
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 egg
  • 1/2 cup breadcrumbs
  • 8 ounces mozzarella cheese, cut into cubes
  • 2 tablespoons cream cheese
  • 1/3 cup honey
  • 2 tablespoons barbecue sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 tablespoon butter
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the ground chicken, salt, black pepper, garlic powder, onion powder, paprika, egg, and breadcrumbs in a large bowl.
  3. Divide the chicken mixture into equal portions and flatten each into a thick round.
  4. Place a cube of mozzarella and a scoop of cream cheese in the center of each round, then seal the edges.
  5. Simmer honey, barbecue sauce, Dijon mustard, garlic powder, and butter in a saucepan over medium heat for 2-3 minutes.
  6. Arrange the stuffed medallions in a greased baking dish and brush generously with glaze.
  7. Bake for 25-30 minutes, brushing halfway through cooking.
  8. Broil for an additional 2-3 minutes for caramelization, then let rest for 5 minutes.
  9. Garnish with fresh parsley and thyme before serving.

Notes

Make-ahead: Assemble a day in advance and store in the fridge. Cook in an air fryer at 370°F for 15-20 minutes for a crispy exterior.
