Description

Juicy chicken breasts wrapped in crispy breadcrumbs, topped with melted mozzarella and marinara for a comforting dish.


Ingredients

  • 4 large boneless, skinless chicken breasts (halved horizontally into cutlets)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian seasoned breadcrumbs or Panko
  • 1/2 cup grated Parmesan cheese
  • 2 cups premium marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • Finely chopped fresh parsley or basil (for garnish)

Instructions

  1. Preheat your oven to 400°F (204°C). Set up your breading station with three shallow bowls: the first with flour, garlic powder, salt, and pepper; the second with beaten eggs; and the third with a mix of breadcrumbs and grated Parmesan cheese.
  2. Dredge each chicken cutlet in the seasoned flour, shaking off any excess. Then, dip it into the egg wash, ensuring it’s completely coated, and finally press it firmly into the breadcrumb-Parmesan mixture.
  3. Heat olive oil in your large skillet over medium-high heat. Add the breaded chicken and sear for about 3–4 minutes on each side until the crust turns golden brown.
  4. Spread 1 cup of marinara sauce across the bottom of a 9×13-inch baking dish. Arrange the seared chicken cutlets on top in a single layer, then slather the remaining marinara sauce over each piece.
  5. Cover generously with shredded mozzarella cheese.
  6. Bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese bubbles.
  7. Remove from the oven and garnish with freshly chopped parsley or basil. Serve immediately.

Notes

You can bread the chicken and store it in the fridge for a few hours before cooking. For a gluten-free version, substitute regular breadcrumbs with gluten-free breadcrumbs.
