- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, chopped
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 cup shredded cheese (mozzarella or cheddar)
- Salt and pepper to taste
- Olive oil for cooking
- Optional: parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Melt 2 tablespoons of butter in a skillet over medium heat.
- Add the chopped mushrooms and minced garlic, cooking until the mushrooms are soft and golden.
- Stir in the shredded cheese until melted, then remove from heat.
- Carefully cut a pocket into each chicken breast.
- Stuff the chicken breasts with the mushroom and cheese mixture.
- Season the outside of the chicken with salt and pepper.
- Heat a little olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts on both sides until golden brown, about 3 to 4 minutes each side.
- Add the remaining tablespoon of butter to the skillet and spoon it over the chicken.
- Transfer the skillet to the oven and bake for 20-25 minutes.
- Let the chicken rest for a few minutes before serving, optionally garnished with parsley.
Notes
For a crispier exterior, consider using an air fryer at 375°F (190°C) for about 15 minutes. You can also prepare the stuffing in advance and store it in the fridge.
