- 1 lb ground pork
- 1 can enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 corn tortillas
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground pork in a large skillet over medium heat until browned.
- Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in the cumin, salt, and pepper, followed by the black beans and corn.
- Layer 4 tortillas on the bottom of a baking dish, followed by half of the pork mixture and a layer of cheese.
- Repeat the layering process with the remaining ingredients.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
Notes
You can prepare the pork mixture in advance and refrigerate it before baking. Use an air fryer for individual portions for a crispy finish.
