Description

A comforting Cheesy Pork Enchilada Bake featuring layers of seasoned ground pork, corn tortillas, and melted cheese, perfect for family gatherings.


Ingredients

  • 1 lb ground pork
  • 1 can enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 corn tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground pork in a large skillet over medium heat until browned.
  3. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  4. Stir in the cumin, salt, and pepper, followed by the black beans and corn.
  5. Layer 4 tortillas on the bottom of a baking dish, followed by half of the pork mixture and a layer of cheese.
  6. Repeat the layering process with the remaining ingredients.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Garnish with chopped cilantro before serving.

Notes

You can prepare the pork mixture in advance and refrigerate it before baking. Use an air fryer for individual portions for a crispy finish.
