Description

A luxurious roasted cauliflower infused with gooey cheese filling, perfect for any occasion.


Ingredients

  • 1 large whole cauliflower (leaves removed, core trimmed)
  • Water for boiling
  • 1 tsp salt
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/2 cup cream cheese (softened)
  • 2 tbsp sour cream or Greek yogurt
  • 2 cloves garlic (minced)
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • Salt (to taste)
  • Fresh parsley (chopped – optional)
  • Chili flakes (optional)
  • Extra cheese for topping (optional)

Instructions

  1. Preheat your oven to 190°C (375°F) and line a baking tray or dish with parchment paper for an effortless clean-up.
  2. Prepare your cauliflower: Bring a large pot of salted water to a roaring boil. Gently lower the head of cauliflower into the bubbling water and parboil for about 8-10 minutes.
  3. Mix the cheesiness: In a mixing bowl, combine the cheddar, mozzarella, cream cheese, sour cream, minced garlic, paprika, black pepper, and a dash of salt. Stir until all ingredients meld into a creamy, flavorful blend.
  4. Stuff the cauliflower: Carefully place the cauliflower in your prepared baking dish. Open up the florets slightly to create space for the cheese mixture and spoon some of the remaining mixture on top.
  5. Bake to perfection: Slide the dish into your preheated oven and let it bake for about 35-45 minutes.
  6. Garnish and serve: Remove from the oven and sprinkle with fresh parsley or chili flakes.

Notes
