A delicious twist on traditional meatloaf, layered with savory chicken, smoky ham, and melted Swiss cheese, topped with a creamy Dijon-mayo mixture.

- 2 lbs ground chicken
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1/2 cup milk
- 1 small onion (finely diced)
- 2 cloves garlic (minced)
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 teaspoon dried parsley
- 6 slices Swiss cheese
- 6 slices deli ham
- 1/2 cup shredded Swiss cheese (for topping)
- Dijon-mayo mixture (for topping)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease or line a loaf pan with parchment paper.
- Mix the ground chicken, breadcrumbs, eggs, milk, onion, garlic, mustard, salt, pepper, paprika, and parsley in a large bowl until well combined.
- Spread half of the chicken mixture into the bottom of the prepared pan to create a base layer.
- Layer the ham slices over the chicken, followed by the cheese slices.
- Seal it by spreading the remaining chicken mixture over the filling and pressing down slightly.
- Bake for about 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
- Add the topping in the last 5 minutes by mixing the Dijon mustard with the mayonnaise and spreading it atop the meatloaf. Sprinkle shredded Swiss cheese on top.
- Rest for 10 minutes before slicing and serve warm.
Notes
Feel free to substitute ground turkey or beef for the chicken. This meatloaf freezes well for meal prep.
