Description

A delicious twist on traditional meatloaf, layered with savory chicken, smoky ham, and melted Swiss cheese, topped with a creamy Dijon-mayo mixture.


Ingredients

  • 2 lbs ground chicken
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1/2 cup milk
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon dried parsley
  • 6 slices Swiss cheese
  • 6 slices deli ham
  • 1/2 cup shredded Swiss cheese (for topping)
  • Dijon-mayo mixture (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease or line a loaf pan with parchment paper.
  2. Mix the ground chicken, breadcrumbs, eggs, milk, onion, garlic, mustard, salt, pepper, paprika, and parsley in a large bowl until well combined.
  3. Spread half of the chicken mixture into the bottom of the prepared pan to create a base layer.
  4. Layer the ham slices over the chicken, followed by the cheese slices.
  5. Seal it by spreading the remaining chicken mixture over the filling and pressing down slightly.
  6. Bake for about 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Add the topping in the last 5 minutes by mixing the Dijon mustard with the mayonnaise and spreading it atop the meatloaf. Sprinkle shredded Swiss cheese on top.
  8. Rest for 10 minutes before slicing and serve warm.

Notes

Feel free to substitute ground turkey or beef for the chicken. This meatloaf freezes well for meal prep.
