Description

Delightful Chicken Salad Pinwheels filled with shredded chicken, cranberries, apples, and pecans, wrapped in tortillas for a perfect picnic bite.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup dried cranberries
  • 1/2 cup chopped apples
  • 1/2 cup chopped pecans
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 4 large tortillas or wraps
  • Lettuce leaves

Instructions

  1. In a large mixing bowl, combine the shredded chicken, dried cranberries, chopped apples, chopped pecans, mayonnaise, Dijon mustard, salt, and pepper. Mix well.
  2. Lay a tortilla flat on your cutting board and place a layer of fresh lettuce leaves on top.
  3. Spread a generous layer of the chicken salad mixture over the lettuce.
  4. Carefully roll the tortilla tightly from one side to the other.
  5. Utilizing a serrated knife, slice the roll into bite-sized pinwheels, about an inch thick.
  6. Repeat the process with the remaining tortillas and filling.
  7. Serve immediately or cover and refrigerate to allow flavors to meld.

Notes

Make-ahead: Prepare the chicken salad mixture the night before and assemble the pinwheels the next day. Customize with ingredients based on preference.
