Ingredients

- 2 cups cooked chicken, shredded
- 1/2 cup dried cranberries
- 1/2 cup chopped apples
- 1/2 cup chopped pecans
- 1/2 cup mayonnaise
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 4 large tortillas or wraps
- Lettuce leaves
Instructions
- In a large mixing bowl, combine the shredded chicken, dried cranberries, chopped apples, chopped pecans, mayonnaise, Dijon mustard, salt, and pepper. Mix well.
- Lay a tortilla flat on your cutting board and place a layer of fresh lettuce leaves on top.
- Spread a generous layer of the chicken salad mixture over the lettuce.
- Carefully roll the tortilla tightly from one side to the other.
- Utilizing a serrated knife, slice the roll into bite-sized pinwheels, about an inch thick.
- Repeat the process with the remaining tortillas and filling.
- Serve immediately or cover and refrigerate to allow flavors to meld.
