Delightful chocolate peanut butter cookies that are soft, chewy, and full of flavor.
Ingredients

- 1 cup peanut butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the peanut butter, sugar, egg, vanilla extract, baking soda, and salt in a medium mixing bowl until blended.
- Add the chocolate chips and fold into the dough.
- Scoop spoonfuls of dough onto a parchment-lined baking sheet with space in between.
- Bake for 10-12 minutes, until edges are set and tops are slightly soft.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Cookies can be made ahead and stored in the fridge for up to three days or frozen for longer storage.
