Description

Çılbır is a delightful Turkish dish featuring poached eggs over creamy yogurt, drizzled with a fragrant butter sauce, perfect for brunch or a light lunch.

Ingredients

Scale
  • 4 fresh eggs
  • 1 cup plain yogurt (Greek preferred)
  • 2 tablespoons unsalted butter
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • Salt to taste
  • Pepper to taste
  • Optional: Squeeze of lemon juice

Instructions

  1. Poach the eggs: Fill a saucepan with water and bring to a gentle simmer. Add a splash of vinegar. Crack each egg into small cups and slide into the water. Cook for 3-4 minutes until whites are set but yolks remain runny. Remove with a slotted spoon and drain on a paper towel.
  2. Prepare the yogurt: In a bowl, whisk the yogurt, adding salt and a squeeze of lemon juice for brightness.
  3. Make the butter sauce: In a non-stick skillet, melt butter over medium heat, then add paprika and red pepper flakes, stirring gently.
  4. Assemble the dish: Spoon yogurt onto a plate, nestle the poached eggs on top, drizzle with butter sauce, and sprinkle with salt and paprika.
  5. Serve immediately with crusty bread.

Notes

For a lighter version, consider using olive oil instead of butter. Fresh herbs like dill can be added for customization.
