Description

A delightful Turkish breakfast dish featuring poached eggs on a bed of garlicky yogurt, served with crusty sourdough bread.


Ingredients

  • 2 eggs
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Sourdough bread for serving

Instructions

  1. Bring water to a gentle simmer in a medium-sized pot. (Optional: add a splash of vinegar.)
  2. Crack the eggs into the simmering water one at a time and poach for 3-4 minutes.
  3. Mix the yogurt with minced garlic and a pinch of salt until creamy.
  4. Melt butter and olive oil in a non-stick skillet over medium heat, then add red pepper flakes.
  5. Spread the garlicky yogurt on a plate and gently place the poached eggs on top.
  6. Drizzle the spiced butter over the eggs and serve with slices of crusty sourdough bread.

Notes

Use fresh eggs and thick, tangy yogurt for the best results. You can prepare the yogurt mixture in advance.
