  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 ounces semisweet chocolate, chopped
  • 1/4 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for whipped cream)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust: In a bowl, combine the chocolate cookie crumbs, sugar, and melted butter until well mixed. Press this mixture firmly into a pie pan and bake for 8-10 minutes. Let it cool completely.
  3. Melt the chocolate: In a saucepan over low heat, gently melt the semisweet chocolate, stirring constantly until smooth. Remove from heat and allow it to cool slightly.
  4. Make the filling: In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla. Add the cooled melted chocolate and mix until fully combined.
  5. Combine everything: Pour the chocolate filling into the cooled pie crust and refrigerate for at least 4 hours to set.
  6. Whip the cream: Just before serving, whip the heavy cream with 2 tablespoons of powdered sugar until stiff peaks form. Spread or pipe this over the pie and garnish with chocolate shavings.
