- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter, melted
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 1 cup heavy whipping cream
- 1 cup shredded coconut
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch pie pan.
- Bake for 8-10 minutes, or until golden brown and fragrant. Let the crust cool on a wire rack.
- Whisk the sweetened condensed milk, fresh lime juice, and lime zest until smooth. Pour this mixture into your cooled crust.
- Bake again for 10 minutes. Allow it to cool to room temperature before refrigerating for at least 2 hours.
- Whip the heavy cream until soft peaks form. Spread over the pie.
- Sprinkle the shredded coconut generously across the top.
Notes
Use freshly squeezed lime juice for optimal flavor. This pie can be made ahead and stored in the fridge for up to 3 days.
