Description

Ingredients

  • 1.5 to 2 pounds chicken tenderloins
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup cranberry sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the chicken tenderloins with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sear the chicken tenderloins for about 2-3 minutes on each side until golden.
  5. In a bowl, mix cranberry sauce, Dijon mustard, apple cider vinegar, and honey.
  6. Place the seared chicken in a baking dish and pour the cranberry glaze over it.
  7. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Let it rest for a few minutes before serving.
