- 1–2 large balls Burrata Cheese (fresh, at room temperature)
- 2 cups Cherry Tomatoes (whole, for blistering)
- 4 cloves Garlic (thinly sliced)
- 3 tbsp Olive Oil (high quality)
- A handful of Fresh Basil (whole leaves)
- 1/2 tsp Red Pepper Flakes (for gentle heat)
- Salt & Black Pepper (to taste)
Instructions
- Boil the pasta: Fill a large pot with water and season it generously with salt. Bring it to a rolling boil, then add the spaghetti. Cook until al dente—around 8-10 minutes—then drain and reserve about 1/4 cup of the starchy pasta water.
- Blister the tomatoes: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Cook the cherry tomatoes for 6-8 minutes until they blister and burst.
- Toss and gloss: Lower the heat to medium-low. Add your cooked spaghetti and a splash of the reserved pasta water. Toss quickly to coat every strand.
- Plump with basil: Add the fresh basil leaves just before serving, stirring them in until they begin to wilt.
- The grand finale: Twist the pasta onto warmed plates, topping with the burrata, allowing it to cascade over the pasta.
Notes
Always bring burrata to room temperature before serving. Season pasta water generously to enhance flavor.
