Description
A comforting and hearty casserole with layers of potatoes, corned beef, and melted cheddar cheese, perfect for family gatherings.

- 4 medium potatoes, thinly sliced
- 300g–400g corned beef, chopped
- 1 medium onion, sliced
- 150g–200g cheddar cheese, shredded
- 100ml cream or milk (optional)
- 2 tbsp butter
- 2 cloves garlic, minced
- Salt, black pepper, and paprika to taste
Instructions
- Preheat your oven to 180°C (350°F).
- Grease a baking dish with butter.
- Melt butter in a frying pan over medium heat, then add onions and garlic.
- Introduce corned beef to the pan and cook for 2-3 minutes.
- Layer half of the sliced potatoes at the bottom of the dish.
- Sprinkle with salt, pepper, and paprika, then add half of the corned beef mixture and cheese.
- Repeat the layering process with remaining ingredients.
- If using, pour cream or milk over the top layer.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake uncovered for another 10-15 minutes until golden brown.
- Cool slightly before serving.
Notes
You can prepare the bake up to a day in advance and adjust baking time accordingly. Feel free to customize with vegetables or different meats.
