Description

A comforting dish of penne pasta enveloped in a creamy sauce with tender steak bites, cheddar, mozzarella, and a hint of garlic.

Ingredients

Scale
  • 1 lb Sirloin, Ribeye, or New York Strip steak
  • 1 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • Salt & Freshly cracked black pepper
  • 1 lb Penne pasta
  • 2 tbsp Unsalted butter
  • 4 cloves Garlic, minced
  • 1/2 cup Diced tomatoes
  • 1 cup Beef broth (or low-sodium chicken broth)
  • 1.5 cups Heavy cream
  • 1 cup Sharp cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 cup Mozzarella cheese, shredded
  • Fresh parsley, finely chopped
  • Extra cracked black pepper

Instructions

  1. Sear the steak: Heat olive oil in a large skillet over medium-high heat. Season the steak cubes with garlic powder, smoked paprika, salt, and pepper. Cook for about 3-4 minutes until browned on all sides. Remove from the skillet and set aside.
  2. Create the base: In the same skillet, melt butter. Add minced garlic and sauté for around 1 minute until fragrant. Toss in the diced tomatoes, beef broth, and heavy cream. Bring to a gentle simmer.
  3. Add the cheeses: Stir in sharp cheddar and Parmesan cheese until melted and combined. Keep cooking until the sauce thickens slightly.
  4. Cook the pasta: While your sauce simmers, cook the penne pasta according to package instructions until al dente. Drain, but save a little pasta water in case you need to thin the sauce.
  5. Combine everything: Add the drained pasta to the skillet, along with the cooked steak bites. Toss everything together.
  6. Prepare for baking: Transfer the creamy steak penne to a baking dish. Top with mozzarella cheese, and sprinkle on the fresh parsley and extra cracked black pepper.
  7. Bake to perfection: Place in a preheated oven at 350°F (175°C) for 15-20 minutes, or until the cheese bubbles and turns golden.

Notes

Make-ahead tips: You can prep the sauce and cook the steak a day in advance.
