- 1 box manicotti shells
- 1 lb large shrimp, peeled, deveined, and chopped
- 15 oz ricotta cheese
- 1 cup mozzarella, shredded
- 1/4 cup parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 cup Alfredo sauce
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Boil manicotti shells in a large pot of salted water for 5–6 minutes until al dente. Drain and let cool.
- Prepare the filling by mixing ricotta, 1/2 cup mozzarella, parmesan, egg, garlic, Italian seasoning, and chopped shrimp in a bowl until smooth.
- Stuff each manicotti shell with the filling, placing a whole shrimp at the end of each shell for presentation.
- Assemble in a baking dish with a layer of Alfredo sauce on the bottom, then place the stuffed shells and top with remaining sauce and mozzarella.
- Bake covered with foil for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden brown.
- Garnish with fresh parsley and serve hot.
Notes
For a make-ahead option, assemble the manicotti and store in the fridge until ready to bake. Adjust baking time if chilled.
