Ingredients

  • 1 box manicotti shells
  • 1 lb large shrimp, peeled, deveined, and chopped
  • 15 oz ricotta cheese
  • 1 cup mozzarella, shredded
  • 1/4 cup parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 cup Alfredo sauce
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil manicotti shells in a large pot of salted water for 5–6 minutes until al dente. Drain and let cool.
  3. Prepare the filling by mixing ricotta, 1/2 cup mozzarella, parmesan, egg, garlic, Italian seasoning, and chopped shrimp in a bowl until smooth.
  4. Stuff each manicotti shell with the filling, placing a whole shrimp at the end of each shell for presentation.
  5. Assemble in a baking dish with a layer of Alfredo sauce on the bottom, then place the stuffed shells and top with remaining sauce and mozzarella.
  6. Bake covered with foil for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden brown.
  7. Garnish with fresh parsley and serve hot.

Notes

For a make-ahead option, assemble the manicotti and store in the fridge until ready to bake. Adjust baking time if chilled.
