Description

A delightful dish featuring succulent chicken breasts stuffed with a creamy mixture of spinach and feta cheese, perfect for any occasion.


Ingredients

Scale
  • 4 chicken breasts
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté minced garlic for about 30 seconds.
  3. Add spinach and stir until wilted down, approximately 2-3 minutes.
  4. Combine wilted spinach with feta, cream cheese, salt, pepper, and oregano in a bowl.
  5. Cut a pocket into each chicken breast.
  6. Stuff each chicken breast with the creamy spinach mixture.
  7. Season the outside of the chicken breasts with salt and pepper.
  8. Sear the stuffed chicken in the skillet for about 4 minutes on each side until golden brown.
  9. Transfer the chicken to a baking dish and bake for 20-25 minutes, until fully cooked.
  10. Let the chicken rest for a few minutes before slicing.

Notes

For make-ahead options, prep the filling in advance. You can also use frozen spinach; just be sure to drain it well.
