- 4 chicken breasts
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1/2 cup cream cheese, softened
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté minced garlic for about 30 seconds.
- Add spinach and stir until wilted down, approximately 2-3 minutes.
- Combine wilted spinach with feta, cream cheese, salt, pepper, and oregano in a bowl.
- Cut a pocket into each chicken breast.
- Stuff each chicken breast with the creamy spinach mixture.
- Season the outside of the chicken breasts with salt and pepper.
- Sear the stuffed chicken in the skillet for about 4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes, until fully cooked.
- Let the chicken rest for a few minutes before slicing.
Notes
For make-ahead options, prep the filling in advance. You can also use frozen spinach; just be sure to drain it well.
