- 8 oz penne pasta
- 1 lb boneless, skinless chicken breast, cut into bite-sized strips
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1/2 cup heavy cream
- 1/2 cup fresh basil leaves, torn
- 1/4 cup grated parmesan cheese
- Salt, pepper, and Italian seasoning to taste
Instructions
- Boil the penne pasta in salted water until al dente, reserving 1/4 cup of pasta water before draining.
- Season the chicken strips with salt, pepper, and Italian seasoning, then heat olive oil in a skillet and sear the chicken for 5-6 minutes until golden brown.
- Remove the chicken from the pan and set aside.
- Add minced garlic to the same skillet and sauté for 30 seconds. Then pour in the marinara sauce and heavy cream, stirring gently.
- Allow the sauce to bubble and thicken slightly over 2-3 minutes.
- Stir the cooked chicken and penne back into the sauce, adding some reserved pasta water if needed.
- Fold in most of the basil and plate immediately, garnishing with remaining basil and parmesan cheese.
