Deliciously crispy chicken cutlets fried to perfection and topped with a heavenly garlic butter sauce and gooey cheese.

- 2 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Panko breadcrumbs
- 1/4 cup grated Parmesan cheese (optional)
- 1/2 cup neutral frying oil
- 1 cup shredded Mozzarella or Provolone cheese
- 4 tbsp unsalted butter
- 3 cloves garlic, finely minced
- 2 tbsp fresh parsley, finely chopped
- 1 lemon, cut into wedges
- Extra chopped parsley for garnish
Instructions
- Season your chicken by liberally adding salt and pepper to both sides.
- Dredge the chicken in flour, shaking off excess, then dip in the beaten eggs, and finally roll in the Panko mixture.
- Heat the oil in a large skillet over medium heat. Test readiness with a bit of flour; it should sizzle.
- Fry the cutlets for 4-5 minutes on each side until golden brown and crispy.
- Create the garlic butter by melting butter in a saucepan over medium heat. Add minced garlic and chopped parsley, stirring until garlic is golden and fragrant (about 2-3 minutes).
- Top the fried chicken with shredded cheese, then drizzle with the garlic butter sauce.
- Garnish the cutlets with lemon wedges and extra parsley before serving.
Notes
You can prepare the chicken cutlets and breadcrumbs a day in advance. For a healthier option, air fry at 375°F for approximately 12-15 minutes.
