Description

Deliciously crispy chicken cutlets fried to perfection and topped with a heavenly garlic butter sauce and gooey cheese.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 cup neutral frying oil
  • 1 cup shredded Mozzarella or Provolone cheese
  • 4 tbsp unsalted butter
  • 3 cloves garlic, finely minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 lemon, cut into wedges
  • Extra chopped parsley for garnish

Instructions

  1. Season your chicken by liberally adding salt and pepper to both sides.
  2. Dredge the chicken in flour, shaking off excess, then dip in the beaten eggs, and finally roll in the Panko mixture.
  3. Heat the oil in a large skillet over medium heat. Test readiness with a bit of flour; it should sizzle.
  4. Fry the cutlets for 4-5 minutes on each side until golden brown and crispy.
  5. Create the garlic butter by melting butter in a saucepan over medium heat. Add minced garlic and chopped parsley, stirring until garlic is golden and fragrant (about 2-3 minutes).
  6. Top the fried chicken with shredded cheese, then drizzle with the garlic butter sauce.
  7. Garnish the cutlets with lemon wedges and extra parsley before serving.

Notes

You can prepare the chicken cutlets and breadcrumbs a day in advance. For a healthier option, air fry at 375°F for approximately 12-15 minutes.
