Ingredients

- 1 1/2 lbs baby potatoes
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1 cup feta cheese
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
- 1 garlic clove
- Fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Boil the potatoes in salted water until fork-tender, about 15 to 20 minutes.
- Cool slightly and smash the potatoes on a baking tray.
- Season with olive oil, salt, pepper, and garlic powder.
- Bake for 30 to 35 minutes until golden and crispy.
- Prepare the whipped feta by blending feta, Greek yogurt, lemon juice, and garlic until smooth.
- Serve the whipped feta on a plate, topped with smashed potatoes and fresh parsley.
Notes
For a quick version, use an air fryer at 400°F (200°C) for about 20 minutes.
