Description

Delicious crispy smashed potatoes topped with velvety whipped feta blend for a comforting side dish.


Ingredients

  • 1 1/2 lbs baby potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 cup feta cheese
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the potatoes in salted water until fork-tender, about 15 to 20 minutes.
  3. Cool slightly and smash the potatoes on a baking tray.
  4. Season with olive oil, salt, pepper, and garlic powder.
  5. Bake for 30 to 35 minutes until golden and crispy.
  6. Prepare the whipped feta by blending feta, Greek yogurt, lemon juice, and garlic until smooth.
  7. Serve the whipped feta on a plate, topped with smashed potatoes and fresh parsley.

Notes

For a quick version, use an air fryer at 400°F (200°C) for about 20 minutes.
