Description

A delightful combination of crispy coconut and juicy chicken that excites the senses.


Ingredients

  • Chicken Pieces (breasts, tenders, or thighs)
  • Shredded Coconut (unsweetened)
  • Plain Breadcrumbs
  • Panko Breadcrumbs
  • Egg
  • Salt
  • Pepper
  • Garlic Powder
  • Cooking Oil (spray)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Beat the egg in a bowl, adding a pinch of salt and pepper.
  3. Mix together shredded coconut, breadcrumbs, and garlic powder in another bowl.
  4. Dip each piece of chicken in the egg, letting excess drip off.
  5. Coat it thoroughly in the coconut mixture.
  6. Place the coated chicken on a baking sheet ensuring they don’t touch.
  7. Spray the coated chicken lightly with cooking oil.
  8. Bake for 25-30 minutes, or until golden and crispy.

Notes

Coat chicken ahead of time and store in the fridge for up to a day for best flavor.
