Ingredients
- Chicken Pieces (breasts, tenders, or thighs)
- Shredded Coconut (unsweetened)
- Plain Breadcrumbs
- Panko Breadcrumbs
- Egg
- Salt
- Pepper
- Garlic Powder
- Cooking Oil (spray)
Instructions
- Preheat your oven to 400°F (200°C).
- Beat the egg in a bowl, adding a pinch of salt and pepper.
- Mix together shredded coconut, breadcrumbs, and garlic powder in another bowl.
- Dip each piece of chicken in the egg, letting excess drip off.
- Coat it thoroughly in the coconut mixture.
- Place the coated chicken on a baking sheet ensuring they don’t touch.
- Spray the coated chicken lightly with cooking oil.
- Bake for 25-30 minutes, or until golden and crispy.
