Ingredients

  • 1 medium Onion (Diced)
  • 2 cloves Garlic (Minced)
  • 2 cups Roasted Red Peppers
  • 1 cup Vegetable Broth
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • Salt and Pepper to taste
  • 4 fillets Cod
  • 2 tablespoons Fresh Parsley (Chopped)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, around 3-4 minutes.
  2. Stir in the minced garlic and sauté for an additional minute.
  3. Add the roasted red peppers to the skillet.
  4. Pour in the vegetable broth, and sprinkle in the smoked paprika and dried oregano. Stir well to combine.
  5. Season the cod fillets generously with salt and pepper. Gently place them in the bubbling sauce, ensuring they are coated.
  6. Cover the skillet and let the cod cook for about 5-7 minutes, or until the fish flakes easily with a fork.
  7. Before serving, sprinkle with freshly chopped parsley.
