- 1 large shallot, finely diced
- 4 cups fresh spinach leaves, washed
- 6 cloves garlic, minced
- 2 pounds beef roast
- Salt and pepper to taste
- Olive oil for searing
- 1 cup beef broth
Instructions
- Preheat your oven to 350°F (175°C) to prepare it for roasting.
- Heat a drizzle of olive oil in a skillet over medium heat. Sauté shallot and garlic until softened, about 2–3 minutes.
- Add fresh spinach, cooking until wilted, then season with salt and pepper.
- Carefully cut a pocket into the beef roast, ensuring not to cut all the way through.
- Generously stuff the spinach mixture into the roast’s pocket.
- Season the outside of the beef roast liberally with salt and pepper.
- Sear the roast in the hot skillet for about 4–5 minutes on each side.
- Transfer the roast to a baking dish and pour beef broth into the bottom.
- Roast in the oven for about 1.5 hours, or until the internal temperature reaches 135°F for medium-rare.
- Let the roast rest for 10 minutes before slicing.
Notes
Feel free to prep the spinach stuffing a day in advance. Experiment with added herbs or vegetables to customize the filling.
