Description

A tender beef roast stuffed with a creamy, garlicky spinach filling, perfect for family gatherings and special occasions.


Ingredients

Scale
  • 1 large shallot, finely diced
  • 4 cups fresh spinach leaves, washed
  • 6 cloves garlic, minced
  • 2 pounds beef roast
  • Salt and pepper to taste
  • Olive oil for searing
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 350°F (175°C) to prepare it for roasting.
  2. Heat a drizzle of olive oil in a skillet over medium heat. Sauté shallot and garlic until softened, about 2–3 minutes.
  3. Add fresh spinach, cooking until wilted, then season with salt and pepper.
  4. Carefully cut a pocket into the beef roast, ensuring not to cut all the way through.
  5. Generously stuff the spinach mixture into the roast’s pocket.
  6. Season the outside of the beef roast liberally with salt and pepper.
  7. Sear the roast in the hot skillet for about 4–5 minutes on each side.
  8. Transfer the roast to a baking dish and pour beef broth into the bottom.
  9. Roast in the oven for about 1.5 hours, or until the internal temperature reaches 135°F for medium-rare.
  10. Let the roast rest for 10 minutes before slicing.

Notes

Feel free to prep the spinach stuffing a day in advance. Experiment with added herbs or vegetables to customize the filling.
