Description

Delightful cheesecake bars featuring a creamy filling and a colorful funfetti cake crust, perfect for Easter celebrations.


Ingredients

  • 1 package Funfetti cake mix
  • 1/2 cup unsalted butter, melted
  • 1 egg
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 additional egg
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup festive sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×9 inch baking pan generously.
  2. Combine Funfetti cake mix, melted butter, and 1 egg in a mixing bowl. Mix until blended and press into the bottom of the prepared pan to form the crust.
  3. Beat together cream cheese, granulated sugar, and the additional egg in another bowl until smooth and creamy.
  4. Stir in vanilla extract and sour cream until fully incorporated.
  5. Fold in festive sprinkles carefully.
  6. Pour the cheesecake filling over the crust and spread evenly.
  7. Bake for 25-30 minutes until edges are set and center is slightly jiggly.
  8. Cool at room temperature then refrigerate for at least 2 hours before serving.

Notes

These bars store well in the fridge and can be made ahead of time. Serve chilled, optionally with fresh berries, whipped cream, or chocolate sauce.
