- 2 Carrots, grated
- 1 cup All-purpose flour
- 2 Eggs
- 1/4 cup Fresh parsley or dill, chopped

- Salt, to taste
- Oil, for frying
Instructions
- Prepare your vegetables by grating zucchini and carrots, and squeeze out excess liquid.
- Mix the grated vegetables, flour, herbs, spices, and eggs in a bowl until combined.
- Get the skillet hot over medium heat, adding enough oil to coat the pan.
- Spoon and drop small patties into the hot oil, leaving space between them.
- Fry for 3-4 minutes on each side until golden and crispy.
- Drain on paper towels and serve warm with a dip of your choice.
