Description

Delight in these crunchy vegetable fritters packed with flavor and vibrant veggies, perfect for snacks or appetizers.


Ingredients

  • 1 Zucchini, grated
  • 2 Carrots, grated
  • 1 cup All-purpose flour
  • 2 Eggs
  • 1/4 cup Fresh parsley or dill, chopped
  • 1 tsp Cumin
  • Salt, to taste
  • Oil, for frying

Instructions

  1. Prepare your vegetables by grating zucchini and carrots, and squeeze out excess liquid.
  2. Mix the grated vegetables, flour, herbs, spices, and eggs in a bowl until combined.
  3. Get the skillet hot over medium heat, adding enough oil to coat the pan.
  4. Spoon and drop small patties into the hot oil, leaving space between them.
  5. Fry for 3-4 minutes on each side until golden and crispy.
  6. Drain on paper towels and serve warm with a dip of your choice.

Notes

These fritters are best served fresh, but you can prepare the vegetables a day ahead. For a healthier option, consider air frying.
