- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 teaspoon ground cinnamon
- 2 cups peeled and sliced apples (such as Granny Smith or Honeycrisp)
- 1 tablespoon lemon juice
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup rolled oats
Instructions
- Preheat your oven to 325°F (163°C).
- Combine the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar in a medium bowl until well blended.
- Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
- Cool the crust, then beat the softened cream cheese with 1 cup sugar and vanilla extract in a large mixing bowl until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in sour cream and cinnamon until creamy.
- Toss the apples with lemon juice, brown sugar, flour, and salt. Gently fold into the cream cheese mixture.
- Pour the batter over the cooled crust and sprinkle rolled oats on top.
- Bake for 55-60 minutes until the center is set and edges are golden.
- Turn off the oven, leaving the cheesecake inside for additional cooling.
- Chill for at least 4 hours or overnight before serving.
