Description

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon ground cinnamon
  • 2 cups peeled and sliced apples (such as Granny Smith or Honeycrisp)
  • 1 tablespoon lemon juice
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup rolled oats

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar in a medium bowl until well blended.
  3. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
  4. Cool the crust, then beat the softened cream cheese with 1 cup sugar and vanilla extract in a large mixing bowl until smooth.
  5. Add the eggs one at a time, mixing well after each addition. Stir in sour cream and cinnamon until creamy.
  6. Toss the apples with lemon juice, brown sugar, flour, and salt. Gently fold into the cream cheese mixture.
  7. Pour the batter over the cooled crust and sprinkle rolled oats on top.
  8. Bake for 55-60 minutes until the center is set and edges are golden.
  9. Turn off the oven, leaving the cheesecake inside for additional cooling.
  10. Chill for at least 4 hours or overnight before serving.

Notes
