- 1 tbsp olive oil
- 1/2 cup onions, diced
- 1/2 cup green bell peppers, diced
- 1 cup mushrooms, sliced
- 2 garlic cloves, minced
- 1/2 lb ground beef or ground turkey
- 1/2 tsp Italian seasoning
- Salt and black pepper, to taste
- 1 cup low-carb marinara sauce (no sugar added)
- 1/4 tsp crushed red pepper flakes, optional
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with your oven-safe ramekins.
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onions, bell peppers, and mushrooms; cooking for about 4–5 minutes until softened.
- Just before they reach perfection, add the minced garlic and cook for another minute until fragrant.
- Push the sautéed veggies to one side of the skillet for the meat.
- Add the ground beef or turkey, seasoning with Italian seasoning, salt, and pepper. Cook until fully browned.
- Stir in the low-carb marinara sauce and crushed red pepper flakes, letting it simmer for 2–3 minutes.
- Divide the meat sauce mixture among the prepared bowls, topping with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 10–12 minutes until the cheese bubbles and turns golden brown.
- Allow cooling for 2–3 minutes, then garnish with fresh basil or parsley before serving.
Notes
You can make-ahead the meat and veggie mixture a day in advance. For a crispy finish, consider using an air fryer.
