Description

A refreshing no-bake dessert that combines the sweetness of ripe peaches with creamy layers of whipped cream and ladyfingers.


Ingredients

  • 8 medium peaches, extra-ripe and sweet
  • 1/2 cup white granulated sugar
  • 1/2 cup peach liqueur (or peach juice)
  • 16 oz cream cheese (or mascarpone)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch sea salt
  • 3 cups heavy whipping cream, well-chilled
  • 50 to 60 pieces ladyfinger cookies, firm & crispy
  • Fresh mint leaves, for garnish

Instructions

  1. Begin by gently washing the peaches under cool running water. Pat them dry, then slice them in half, removing the pits. Dice the flesh into small cubes.
  2. Add the peach cubes to a bowl, mixing them with half a cup of granulated sugar and a splash of peach liqueur or juice. Allow this mixture to sit for about 15 minutes.
  3. In a large mixing bowl, combine the cream cheese (or mascarpone), powdered sugar, vanilla extract, and a pinch of sea salt. Whip these ingredients together until smooth and creamy.
  4. In a separate bowl, pour the well-chilled heavy whipping cream. Beat it on high speed until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  5. Start layering your tiramisu by dipping each ladyfinger briefly into the peach liqueur mixture. Arrange a layer of dipped ladyfingers in the bottom of your baking dish.
  6. Spoon half of the cream filling over the ladyfingers, then layer half of the diced peaches on top.
  7. Repeat the process with another layer of dipped ladyfingers, followed by the remaining cream filling and peaches.
  8. Refrigerate for at least 240 minutes (or overnight) to allow the flavors to meld.
  9. Serve cold, garnished with fresh mint leaves.
