- 10 cups strawberries (divided)
- 16 oz cream cheese (softened at room temp)
- 3 cups powdered sugar
- 2 tsp vanilla extract
- Zest from 1 lemon
- 3 cups heavy whipping cream (well-chilled)
- 48–60 pieces ladyfinger cookies (hard, crispy variety)
- 1 oz freeze-dried strawberries
Instructions
- Begin by washing and hulling the strawberries. Slice them into thin pieces, reserving about a cup of the prettiest ones for garnishing later.
- In a medium bowl, sprinkle a tablespoon of powdered sugar over the sliced strawberries and gently toss them to coat. Let them macerate for about 15-20 minutes.
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add the powdered sugar, followed by vanilla extract and lemon zest, mixing until fully incorporated.
- In another bowl, whip the cold heavy cream to stiff peaks.
- Gently fold the whipped cream into the cream cheese mixture.
- Begin layering by spreading a thin layer of the cream mixture on the bottom of your 9×13-inch baking dish.
- Quickly dip each ladyfinger into the strawberry syrup and arrange them in a single layer over the cream.
- Spread half of the remaining cream mixture over the ladyfingers and top with half of the macerated strawberries.
- Repeat the layers with another dip-and-layer of ladyfingers, the remaining cream, and strawberries.
- Smooth the top with a spatula.
- To finish, crush the freeze-dried strawberries for a crunchy topping and sprinkle them across the top.
- Chill in the refrigerator for at least 240 minutes or overnight to set.
