Description

A delightful twist on the traditional Italian classic, this Easy No-Bake Strawberry Tiramisu features layers of rich creaminess and fresh strawberries without the need for baking.


Ingredients

  • 10 cups strawberries (divided)
  • 16 oz cream cheese (softened at room temp)
  • 3 cups powdered sugar
  • 2 tsp vanilla extract
  • Zest from 1 lemon
  • 3 cups heavy whipping cream (well-chilled)
  • 4860 pieces ladyfinger cookies (hard, crispy variety)
  • 1 oz freeze-dried strawberries

Instructions

  1. Begin by washing and hulling the strawberries. Slice them into thin pieces, reserving about a cup of the prettiest ones for garnishing later.
  2. In a medium bowl, sprinkle a tablespoon of powdered sugar over the sliced strawberries and gently toss them to coat. Let them macerate for about 15-20 minutes.
  3. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  4. Gradually add the powdered sugar, followed by vanilla extract and lemon zest, mixing until fully incorporated.
  5. In another bowl, whip the cold heavy cream to stiff peaks.
  6. Gently fold the whipped cream into the cream cheese mixture.
  7. Begin layering by spreading a thin layer of the cream mixture on the bottom of your 9×13-inch baking dish.
  8. Quickly dip each ladyfinger into the strawberry syrup and arrange them in a single layer over the cream.
  9. Spread half of the remaining cream mixture over the ladyfingers and top with half of the macerated strawberries.
  10. Repeat the layers with another dip-and-layer of ladyfingers, the remaining cream, and strawberries.
  11. Smooth the top with a spatula.
  12. To finish, crush the freeze-dried strawberries for a crunchy topping and sprinkle them across the top.
  13. Chill in the refrigerator for at least 240 minutes or overnight to set.
